Juicy cherries, kombucha, and peanut butter create a profile that surprises from the very first sip. It is intensely fruity, lively, and multidimensional, with high acidity, a creamy body, and a long, remarkably distinctive finish. This is one of those coffees that is hard to confuse with any other. This character is shaped both by the producer and the processing method. Neri Ortiz Perez has been developing his farm for years while supporting local farmers, focusing on quality and conscious processing. Carefully selected cherries undergo a multi-stage fermentation and are then slowly dried on raised beds. The result is a coffee where the fermentation does not overpower the bean, but instead highlights its maximum fruitiness, sweetness, and complexity. We selected this coffee because these are precisely the flavors we look for—bold, unexpected, and memorable. It simply proves that Mexico can surprise even those who think they have seen it all in specialty coffee.
