Cupping score: 88 / 100 ABOUT THE FARM AND PRODUCER Alba has been in touch with coffee since early childhood and today continues the family tradition alongside her siblings, running the La Curva farm near the capital of the Cauca region - Popayan. Production here relies on careful, year-round maintenance that keeps the trees in good condition and thereby ensures consistent quality. Several times a year, the plantation is weeded and pruned, and after harvest, damaged coffee fruits are removed to reduce the risk of pests. Additional crops, such as plantains, corn, cassava, avocado, and citrus, provide natural shade, improve soil condition, and serve as an additional source of income for the Sanchez family. ABOUT THE PROCESSING Castillo variety, hand-picked, undergoes initial selection on the farm, then is transported to Area 18 - a modern lab under the Banexport banner.On site, it undergoes another selection process and analysis to determine the most optimal processing method. Fermented for 4 days under controlled conditions in a bioreactor. This process allows for precise control of microorganism activity, helping the coffee maintain a clean yet distinct sensory profile.Dried for 5 days in an automated chamber with temperature and airflow control. ROASTER'S OPINION The definition of perfect balance between the raw material itself and the processing. Fruity depth and complex layers plus tropical-wine intensity result in one of our favorite coffees in 2026! Store in a cool and dry place.
