Method of decaffeination: Sugarcane ABOUT THE REGION The Huila region in Colombia is located between two Andean mountain ranges. The vast area sits at high altitudes, and its fertile volcanic soil and constant water source create diverse climate bands and arable land. The exceptional terroir ensures the production of high-quality coffee with rich flavor profiles. ABOUT THE PROCESSING Ethyl acetate is a naturally occurring ester used to bind and remove caffeine from green coffee. The coffee is sorted and steamed for 30 minutes to open the pores of the beans and prepare them for decaffeination. It is then placed in a solution of water and ethyl acetate, where the E.A. acid begins to bind with chlorogenic acid salts inside the seeds. The tank is drained and refilled until caffeine is no longer detectable. The seeds are steamed again to remove any traces of ethyl acetate, then dried. Store in a cool, dry place.
