Roger Chilcon Flores' 3 ha farm in El Diamante, San José de Lourdes; Caturra and Pache at ~2000 m; cherries macerate overnight to deepen sweetness, depulped, fermented 24-36h, washed and dried on plastic-lined wooden beds in a greenhouse to below 11%; delivered to Falcon Coffees in Jaén. Store in a cold and dry space.
