FROM THE ROASTER Every year, we choose fresh beans from Ethiopia. It’s a big deal for us; we serve them to you over the next 12 months in an espresso that is the gem of our offer. Lively, distinct, and fruity. Sweet, but balanced by a pleasant acidity. We like it that way, and it has already won you over too.Why does this coffee change? Well, we can't stock up five years in advance because the beans will age and no longer taste as good. Every year brings a new harvest, and every year we look for something that matches our ideal flavor profile. That's how we've previously had coffees from the Buku Abel and Banko Gotiti washing stations. This year, the best beans we tasted were produced by the Danche washing station from the Gedeo region.In recent years, Gedeo has become our favorite coffee region. Traditionally, coffees from these areas were sold as originating from Yirgacheffe. However, in recent years, this specific part of the region has begun to be distinguished to highlight the uniqueness of the flavor profiles found here. ABOUT THE FARM The Danche washing station is located in the renowned coffee town of Chelbesa, situated at an altitude between 2,000 and 2,300 meters above sea level. Thanks to fertile soils and suitable cultivation methods, local farmers—around 400 households—achieve very good yields. Most of them manage small, one- or two-hectare farms. Their cherries end up precisely at Danche to be processed according to strict procedures. And trust us, the result is excellent. This coffee doesn't need to "defend" itself in the cup. It is simply outstanding. ROASTER'S OPINION Sweet, fruity, and chocolaty, with clearly marked acidity. If you like lively espresso, you won't find a better place.
