Processing: Honey, Co-ferment Cupping score : 87 / 100 ABOUT THE PROCESSING The coffee cherries underwent a 72-hour dry anaerobic fermentation. During this process, forest berries were added to the fermentation tanks, enriching the flavor profile of the coffee with notes of fruity freshness and distinctiveness. After fermentation, the beans were depulped and transferred to African beds, where they were dried until reaching the ideal moisture level. At least that is what the producer says – we were not there, we are just repeating what they say. And that is why, if you ask us about the processing, we will answer – fake fermentation. ROASTER'S OPINION There are weird coffees, weirder coffees, and then there is our series of fake fermentations. Anyone who has tried them and likes them knows – the yellow bags are not a world of subtlety. Here, it is bold, decisive, and very direct. Colombia Jairo Arcila Blackberry is an intensely foresty coffee, featuring notes of blackberries, citrus, and baking spices in its profile. Store in a cool, dry place.
